Lightly toasted apples coated with brown sugar, cinnamon, and maple syrup.[/caption]
Sipping this sweet and toasty mate conjures images of layered french toast generously topped with cinnamon-coated apples, copiously drenched in thick maple syrup. Complex swirls of candied syrup dissolve bold and robust roasted mate. An ideal blend for those that appreciate highly complex taste profiles to play with.
If using a mate gourd, we recommend the following steps to best experience this blend.
1. Concentrate the apple piece in the middle layer of the gourd, between a layer of mate below and above.
2. Add room temperature “dummy water” to your water hole (further instructions
on preparing yerba mate the traditional way). Allow to sit for 30 seconds.
3. Slowly pour a fine stream of mate water not exceeding 175ºF. Allow to brew in gourd for a good 30 seconds minimum, allowing the maple syrup and apples to sufficiently coalesce with the roasted mate and coconut oil.
4. Sip slowly and appreciate the subtle complexities.
Like a complex bourbon or deep red wine, take your time and savor this kaleidoscopic and heavily layered blend. Each sips brings new arrangements of flavors. Go too fast and you’ll miss the all those wondrous complexities.
