Pronounced she-ma-HOWN,  chimarrão is un-aged, green yerba mate grown in Brazil distinctly for the native population. Brazil also grows most of Uruguays mate, which we consider “Gaucho Mate.” The former is light, brightly green, and has a short cycle. The latter is more robust, aged for several months, and usually has muscular, malty flavors.
